You have a great summary thread on All-clad, so I'm curious about your thoughts. Don't like certain pieces, lines, or brand as a whole. What about Hestan? Enamored by the flush rivets.

Picked at the 12.5" and 2qt for a trial run. At sub $200 it's worth seeing what the fuss is about.

I agree; there are some products that are great. But, pricing a sieve at $80 when you can get an equal product from another company for $18, it's brand name fees.

I've never cooked on Hestan pans, or even seen a detailed review, but they look like good pans. I like that they are fully sealed. The flush rivets sound nice (rivets are definitely better than welds but these don't "intrude" like other rivets), but honestly I've never understand the problem with All-Clad's rivets. They don't get in the way of my cooking, and I don't obsess with how shiny and new my pans need to look after 30 years. To me, as a selling point, it's kind of grasping at straws.

But the bottom line reason I recommend All-Clad D3 (and particularly this sale) is not because they are the best. It's because they occupy a sweet spot of performance, function, durability, and value. Some pans are heavier and better at heat retention, and cost twice as much. Some pans have sealed edges, and cost twice as much. Some pans are just gimmicks to be avoided (Hexclad comes to mind), and cost twice as much.


I think the optimal set has at least a few All-Clad skillets and sauciers, but also has some heavier non-stainless steel pans from other brands, and a nonstick or two from other brands.

Correct. Read the FAQ link. I'm a fan of All-clad stainless cookware -- particularly the fully clad skillets, saucepans, and sauciers. Those are the products that they built their reputation on, and that continue to get rated as the best by places like Cook's Illustrated and Wirecutter.
But I pretty much don't recommend any other products from All-Clad. Since the brand was acquired by a conglomerate, they've started slapping their logo on all kinds of other products -- bakeware, appliances, utensils, and other types of cookware like cast iron pots -- non of which they even make in their own U.S. factories. It's all imported from China, and it's often a terrible value.

We switched from Circulon to All-Clad after learning about the effects of the nonstick flaking off. There's a learning curve to stainless cookware but it heats up quickly and cooks very well.
