We tried 2 person mode but the screen in split mode is a bit annoying, so I bought the iPad version a few days ago for $2 hoping to play with him together, iPad + switch (I have not tried not sure if that will work but hopefully cross play is possible).

It's…mixed. When you're first playing a world it's largely done. But my kids have now created huge worlds (like 100 hours) and once you start to get really expansive, it slows down significantly.
Split screen is similarly rough. We tried four player split on a big world once and it just crashed the game. Now, we just do cross device multiplayer (one kid on a switch, one on an iPad).
You can also adjust visual settings to lower how far you can see, "fancy graphics" lighting and more which helps. But still chuggy.
TL;DR
It's fun and the kids largely don't care about the performance. But it is indeed rough when worlds get large.
