Think like Netflix where you provide the movies. Can initiate torrent downloads easily from your phone and move them to the Plex folder easily too if you have a synology NAS. (Nas isn't needed for Plex but it's nice not running things on the computer I use all the time)

For example, listen to your music collection on your phone… but your PC acts as the "cloud" / server / source. No need to use storage on your phone.

With Plex Pass, you can also do TV Everywhere type functionality using the EPG (electronic programming guide) and a programming source like a cable card adapter or OTA network adapter… plus DVR to your server.

The biggest thing (for me, anyway) is hardware acceleration, the EPG (for Live TV with cable card tuner), DVR capabilities, and offline sync.
Plex Pass users also get bonus content (typically / always sourced as YouTube videos) that are added to, for example, a movie listing.

Since nobody gave you a definitive answer, here you go:
Plex makes it easy to aggregate your media into a cohesive library for consumption.
Primarily, it can take a local file and scrape the internet for more information to make it presentable — like what you see when you browse streaming services.
And because it all lives on a server you host, you have a lot of flexibility on how to view it. There's apps for all major platforms, so you can "tap in" easily and even remotely.
This is the bulk of it, but they've also tried to incorporate other value-added features over the years.
For instance, they have a free and paid streaming service built in, similar to what you'd find with Pluto.
They also recently added a streaming service aggregator, where you can log into Netflix, Hulu, etc and track your shows through one app instead of multiple.
The only thing I use Plex for now is my audiobooks. I download them from an online site, put them in Plex and stream them via Prologue app. It's flawless.
So that's my setup now. Plex for audiobooks only and stream everything else via Stremio + Real-Debrid. Plex still serves those who like to hoard media. I don't do that. I stream, watch and I'm done.
+1 for prologue, only available on iOS but worth it for a small price. lots of tools out there for "freeing" your audiobook library.
I'm not sure why people always assume you need transcoding with Plex, but it's wildly inaccurate.
Plex offers the option of direct streaming, whereby the content is just fed natively.
If you're just watching at home and you have a fairly competent router, every consumption device in modern existence supports H264 (after all, it's how you watch Netflix) and most support H265.
I'm easily able to pull at least four full bitrate 4K streams from a Raspberry Pi 4B without doing any transcoding.
If you do a lot of remote streaming, that's where transcoding can help. But that's also what the "optimize files" option is for.
I've been running mine on a dell t300 mini server loaded with Ubuntu for the past ~6 years or so, no problems
