You folks do what you want (I'm a bit of a retro snob who insists on successfully running 10GbE over CAT5E) but I'm waiting for CAT9 because it's one better than CAT8.

cat5e is inferior when it comes to shielding and crosstalk. People get bamboozled all the time when contractors wire up their homes with cheapo cat5e. I wired My parent's home with Cat6a, cost was minimal.

Block walls? The easiest way is to route cables outside using a rotary hammer drill and use outdoor rated cables. Mikrotik and ubiquiti have some nice outdoor switches with grounding for linking everything.
