But I agree it could be a personal thing -- lots of people can't tell that the colors are bad, and they don't mind.
I've had no problem playing Hogwarts, Titanfall, and even the recent Jedi games (newest one can struggle a bit) but only on the local screen.
Maybe others have had different experiences.
Being able to put the device on standby for a week and come back to a game is amazing (I finished RDR2 over the course of five months that way).
The touchpads set this device apart also - playing anno 1404 in bed is such a novelty.
1. How would I transfer the SteamOs to a new nvme drive?
2. Does the 64gb built in memory just show as another drive?

To transfer the data/os it gets a bit tricky but there are utilities to do it.
What works best is if you reinstall the steam OS from scratch on the new empty SSD using a micro SD card and the utility valve provides.

Is this better or worse than a Z1 (non-extreme) Ally?

If you plan on playing it more around the house and/or near power outlets rather than travelling much, you won't gain much benefit from the extra battery life of the OLED.
I started with the 512gb LCD with the matte screen and then bought an OLED when they became available because I fell victim to the FOMO. Yes the OLED is a better model but not so much so that you need to blow your budget or else you'll regret it.
Setting them next to each other, the colors do pop more on the OLED screen but I've found that once I'm a couple minutes into a game on the LCD, I just get immersed and forget all about it. Tweaking the LCD's colors with an easy to install utility called "VibrantDeck" makes it significantly more competitive.
Honestly the biggest advantage the OLED model has is the higher refresh rate and the ability to set it at more intervals (30, 40, 45) to smooth out the experience with certain games.
If you're hyper sensitive to frame rate issues, that might be the main reason to go for it.
If you're on a budget, you'll be more than happy with the LCD steamdeck. It's a phenomenally versatile device that has allowed me to fit quality game time in my life when I otherwise just would never have the time.
If money isn't a concern, yeah get the OLED and then throw in the largest SSD you can find.
Either way you'll be having a great time.
