I'm same with a lot of modern games... could be nostalgia or simply being jaded. But I especially feel that these 2d games that would have been sprite based in the past, that are now made with 3d assets.... are lacking a lot of atmosphere and that special something.
Another big one for me was Bloodstained. The art wasn't bad... but if it had been sprite work like old castlevanias, it would have looked and played so much better!

Which Bloodstained are you referring to? Ritual of the Night is a different story but don't Curse of the Moon 1 & 2 employ a retro-style pixel art more akin to classic Castlevania?

Ritual oftheNight. Curse of Moon games were pretty good, and similar to old Castvania. But I wish Riutual of the Night was more akin to SotN, or even the excellent DS entries.
speaking of SotN, there is a Deedlit game (Character from the old DnD inspired anime, Record of Lotus War) it's a bit short but they nailed the art and animation and feel. I think some SotN people must have worked on it. Her animation and movement is almost identical to Alucard.

This game is awesome! Good price! Personally i enjoyed the Metroid Prime remaster for switch more but they are close! Snag this if you can!

I felt like it was a return to its roots and a lot harder than the first or super Metroid.
