I find jerky freezes well, so you can portion out amounts you can eat in a day.

The opposite should be true since palatable amounts of sugar actually feeds microorganisms. For example, you feed sugar to yeast to activate it when making bread. Only when the level of sugar is extremely high does it inhibit microbial growth, e.g. in jams.
