I've been pretty pleased with the 8 inch Shi Ba Zi Zuo Chinese chef knife available online for about 30 bucks. It's a good weight, held an edge, taken minimal maintenance, etc. Rarely use German or Japanese now. Just the "cleaver" and a paring knife.

In Chinese these kind of knife literally meant vegetable knife. The cleaver name is for westerners who can't think of anything else once they see knives of such shape.
There are cleavers for bone etc in China. They are called differently (pronounced "kan" knife) and look similar to usual real cleavers.

Chinese style cleavers are much much thinner and lighter than western cleavers. It is used as an all purpose knife like Western/German with a chef's knife or Japanese with Santoku. So basically it would be used for anything you'd use a "normal" knife for and doubles as a food scraper.
