In short, it's an artistic adaptation loophole. But it's effectively as close to the original version as possible, restored in 1080p. It's all that "Han shoots first stuff", but also removes a bunch of bad computer generated stuff added in 1997 with laser disc sources, such as the extra Jabba scene in a New Hope and the awkward singer at Jabba's palace.
There's a separate, but loosely related, 4K project.

will i get to keep it or will D take away perceived owned digital content down the road? i've already noticed many prior purchased titles are gone from my Movies Anywhere/Fandango/Amazon/etc library.

Personally, I'm satisfied that I owned the original trilogy on DVD and I only am getting these new versions for those.
