You'll have to go into a physical Metro store to deal with it.
Apple Store needs to access the Settings menu so you're better off doing the basic setup yourself to let the eSIM activate then delete the eSIM before you trade in -- you don't have to link the phone to an Apple account so skip that part ("skip" should be under create new Apple account screen)
In the past I would do online activation to complete the port process (that way you have fulfilled your promo requirements) then go through basic setup w/ eSIM and skip Apple account -- delete eSIM after setup (or move it to another compatible phone so you can still access your Metro account) then take it to the Apple Store

If you care about your numbers, you should activate on Metro and then port out to another carrier. Trying to avoid activation may work if you get lucky, but if Metro auto activates the line after a given time, the number still ends up at Metro.
Anyone trying to keep the phone sealed for resale is asking for trouble. If you want to resell, you should activate the device, either delete or migrate the eSIM to another phone, and then sell the iPhone. Otherwise you're asking for potential complications.

If you're selling it on, having an eSIM on the device will open you up to a Not as Described claim on eBay, etc. if you sold it as "brand new". If the eSIM (and account, suspended or not) is paired to the device and you sell it on to a Metro user, they won't be able to activate it on Metro and that will also generate a Not as Described claim.
