The discussion with Mint customer service rep yesterday resulted in a trouble ticket being assigned to the "backend office". I was told I'd "receive an e-mail within 24-48 hours".
Late this morning (less than 24 hours after the ticket was issued) the new phone had a notification that the phone was carrier unlocked.
Under Developer Options the OEM unlocking was immediately selectable--I need this for installing the after-market ROM, but this bootloader unlocking is tied to the carrier unlocking.
Soon thereafter I received another notification: "No service" and "Selected network (Mint) unavailable". That may be due to the fact that I had previously deselected "Automatically select network" in settings. So I selected the "Choose network" option and then selected "Mint" (the only option since I hadn't changed Sims) and a few seconds later I was back in business.
I never received the e-mail from the backend office, but everything seems to be working.
To answer a couple other questions folks have asked: My understanding is that this is a permanent carrier unlocking. I believe I'd told the Mint customer service rep (Kylah) that I was going to be going on international travel (as the excuse for needing it carrier unlocked right away). I had paid for a year of service along with the phone. The fact that the service is already fully paid-for is one of the requirements you need to meet for them to unlock your phone right away. I ordered Tuesday of last week and received it via FedEx on Friday. I had used an eSim for the Mint service on this phone. I'm a brand new customer of Mint, but I don't think that should matter.
If I receive an e-mail from the backend office and it contributes any additional information I'll post a follow-up message.
I'd actually ported-in a burner phone number to this service. So after I load GrapheneOS, I'm going to switch numbers (port-in) so my new phone has my main phone number. Hopefully that will take less time and I'll get less of a run-around doing that.

BTW... be careful the sim tray slot is next to a microphone hole... stick it in the right hole...
However when I checked it on Verizon website on compatibility, it told me I can activate a eSIM immediately. Ditto Xfinity Mobile, though it uses Verizon network so not surprisingly it gives the same answer - can activate a eSIM immediately!
I could not find any way to check status on ATT website.

For anybody else wanting to know about getting their phone purchased through this deal unlocked right away: Well, I'm still not sure ...
I ended up calling Mint's toll-free number. After walking me through porting a number into the new service the customer service rep explained that phones can be unlocked immediately for special circumstances, including international travel. He explained I merely needed to call Google at 650-253-0000 and ask them to perform a "google factory reset" after which my phone would be carrier unlocked (and thus bootloader unlocked, which is what I actually need--I want to install GrapheneOS).
"I'm supposed to call Google and they'll unlock my phone?"
"Yes, I know how this sounds, but please rest assured that I've had this identical situation with multiple other customers and this is what you do and you will have your phone unlocked right away."
We spent a couple more minutes talking through what they'd do, and he actually convinced me that I was going to get my phone unlocked. After hanging up with Mint I called the Google number. After making my way through the phone maze I received a recording that this department was "closed for holiday; please go to our website for hours of operation".
Calling the manufacturer? How would they know that I don't have an outstanding financial obligation to the carrier? I'm hopeful but still a bit skeptical I'll get my phone unlocked on Monday.
Sunday my new phone gave me notification about Pixel devices having 24/7 support. I selected it and used the chat option to follow-up on the Mint customer service's insistence that Google can carrier unlock my phone. After some time the google service agent told me my "phone is now unlocked".
"Really?!?" I excitedly checked under developer options and "OEM unlocking" was still greyed out. I sent a screen capture to the Google chat lady and she admitted she made a mistake (if I had to guess she may have also been using Google's repair tool web page which, as others have noted in this thread, reports baloney). She then told me that only the carrier can carrier unlock the device, and that I need to contact Mint Mobile.
Well, duh.
About noon on Monday I called the phone number Mint had provided for Google service as this is how Mint insisted I contact Google. After working the phone maze I was again treated to "Our office is currently closed. Refer to <exact phrase that I can't remember, but basically means 'Google's customer service center'--Googling it doesn't turn up anything> for our hours".
Back to Mint customer service.
I explained the situation yet again and this Mint customer service rep seemed to understand what I was asking. 27 minutes later I was off the phone. She submitted a ticket for the "backend office" to carrier unlock my phone. She told me I'd receive an e-mail from them between 24 and 48 hours confirming my phone would be unlocked.
Someone asked about the magic words needed to get Mint to unlock your phone. I don't think it's that complicated, it's just that not everyone at Mint knows the process. There also may be some confusion/conflation of a screen-locked phone (PIN number required to unlock my phone to use it and I forgot the PIN) vs a carrier-locked phone (making it so I can use the phone with a different cellular service provider). That suspicion comes from my notes when previous Mint customer service rep told me that Google would walk me through performing a "factory reset" to unlock my phone--a factory reset would, indeed, remove the screen lock from my phone. Add to that "OEM unlocked"/"Bootloader unlocked" phone for those that need to install alternate operating system maybe?
At any rate, it was explained by Mint that there are "special circumstances" the phone would be unlocked by Mint before 60 days were up. The example the customer service rep talked about is for someone going on international travel. If you think you need an *excuse*, there you go.
To check if your phone is carrier unlocked without using another carrier's sim card:
1. In settings go to "About Phone" and select "Build number" seven times in a row. Yes, you really have to do this. Push it seven different times, probably without pausing much between each selection. This will enable "Developer Options".
2. Then in settings, from the main/top-level menu select "System". Scroll down to "Developer options" and select it. If you didn't do step 1 above then you won't see "Developer options".
3. Scroll down to "OEM unlocking". If your phone is carrier locked the text will be greyed-out, and the slider switch will be greyed out and unswitchable. If your phone is carrier unlocked the text will be the same bright color as the "Running services" selection below it, and the slider switch will be switchable (currently in the off state). The note below "OEM locking" is "Unavailable on carrier-locked devices".
I'm not positive, but I'm guessing when they do whatever's needed on their end to unlock my device that I'll need to actually restart (reboot) the phone before it'll actually be unlocked.
Crossing my fingers that I'll have an unlocked phone by Wednesday.

But hopefully that's another way to confirm whether a Mint Pixel is carrier unlocked or not, once the backend processes your unlock request.
Perhaps I'm naive, but I'm pretty confident that getting a trouble ticket submitted to Mint's backend office will get your phone unlocked right away (24-48 hours per customer service).

l'll just try and be patient.. at first l was worried they ran out of stock and allowed people to order too many or something, but seeing that it was back in stock and people are ordering again, l'm hoping that's not the case.
