The discussion with Mint customer service rep yesterday resulted in a trouble ticket being assigned to the "backend office". I was told I'd "receive an e-mail within 24-48 hours".
Late this morning (less than 24 hours after the ticket was issued) the new phone had a notification that the phone was carrier unlocked.
Under Developer Options the OEM unlocking was immediately selectable--I need this for installing the after-market ROM, but this bootloader unlocking is tied to the carrier unlocking.
Soon thereafter I received another notification: "No service" and "Selected network (Mint) unavailable". That may be due to the fact that I had previously deselected "Automatically select network" in settings. So I selected the "Choose network" option and then selected "Mint" (the only option since I hadn't changed Sims) and a few seconds later I was back in business.
I never received the e-mail from the backend office, but everything seems to be working.
To answer a couple other questions folks have asked: My understanding is that this is a permanent carrier unlocking. I believe I'd told the Mint customer service rep (Kylah) that I was going to be going on international travel (as the excuse for needing it carrier unlocked right away). I had paid for a year of service along with the phone. The fact that the service is already fully paid-for is one of the requirements you need to meet for them to unlock your phone right away. I ordered Tuesday of last week and received it via FedEx on Friday. I had used an eSim for the Mint service on this phone. I'm a brand new customer of Mint, but I don't think that should matter.
If I receive an e-mail from the backend office and it contributes any additional information I'll post a follow-up message.
I'd actually ported-in a burner phone number to this service. So after I load GrapheneOS, I'm going to switch numbers (port-in) so my new phone has my main phone number. Hopefully that will take less time and I'll get less of a run-around doing that.

i haven't used /e/OS, so my opinion probably isn't fair, but from what I've read GrapheneOS has a more laser-focused attention to (and better architected for) privacy and security on the few Android devices that will be getting consistent, long-term security patches from the manufacturer. /e/OS is trying to do some of the same things for a mish-mash of devices from many manufacturers. Their approach seems a bit less organized and focused.
My arm-chair assessment could be totally wrong.
There's plenty written online comparing them by folks that have actually used both and/or have more knowledge than me.

I was able to chat with a rep, provide them with my reference number from the case and then they were able to see it failed and needed more information.

In my previous message I said I had not received the promised e-mail. Turns out that was incorrect. About 1 1/2 hours after the phone was unlocked an e-mail was caught by my spam folder.
