Last time I bought this from Amazon it didn't rise. Had to add baking powder each time I made it. Date was fine, likely the storage.

You saved me. I almost bought it cause it's cheaper than the Krusteaz from Costco. But having to add eggs, etc. vs just water makes this a no go.

If adding egg, might as well make it from scratch. You basically need:

1) flour, baking powder, baking soda, sugar, salt then mix
2) milk, egg, butter, optional vanilla then mix

Mix 1 and 2 then cook

Considering a 5lb bag of flour costs about the same, this seems like a great deal just to have on hand. You can also use this for a base for all kinds of batter (make crepes, tempura, beer batter, etc) or even things like biscuits.

I agree with your thinking except I'd recommend a complete mix for that. Considering you still need to add eggs, oil and milk for this mix, it's only a few more steps to just make from scratch. This is essentially just a pre mixed box of flour, sugar, salt and baking powder.

I used to buy Bisquick all the time but have resorted to just making my own. I pre prep #1 in a large vin then when I need it, just add 1 cup mix, 1 egg and enough milk to get a good consistency for pancakes or waffles.
