I'll preface this by saying I'm not the target demographic for this game. I don't care much about racing games beyond Mario kart and some bits of Forza horizon here or there, maybe some Burnout back in the day.
But I think this game is almost comically boring. I think you really, really have to care about cars and racing simulations to find joy in this. The races are slow-paced, the handling is tricky if you're not an enthusiast, and the progression is slow. Just beware what you're buying.

Yes, and if you'd like to find out the real world results of particular car characteristics, specs and gear… this one's for you.

Tbh I really want to like this game being different than Forza Motorsport. But I feel like I'm stuck and can't figure out the progression.
So far this one is rather confusing particularly on the user interface.
Like idk what the plan after acquiring Mazda Demio. To the circus and do some racings? ok fine I guess, so I have gone there and won some but nothing else outside of the respective lone event from 3 continents is happening.
Do I need to win all races at 1st place to get more cars, $, and events to progress further?

Go to the cafe and work on your menu books. There are more than 60 at this point. That's how you progress and acquire more cars, coins, tracks, items, and menu options such as multiplayer and mission challenges. There is a lot of content in this game for casual and that does not need to be pay to play. I haven't played racing games in a decade and this game provides quite a bit of challenge in figuring out the characteristics of all the cars. Hell I even invested in a g923 system and rig because the experience improved that much. Even more so with VR2. If you aren't into racing and cars as mentioned earlier then it's not a testament to the game but rather your gaming preferences. This is a lot of game for $20.

Oh the cafe you say? Make sense. Guess I overlooked it. At glance it had nothing to do with racing lol. Thank you so much.
Do you know if I get less content to enjoy if I strictly play solo online or preferably offline? I hate co-op/multiplayer mode.

I prefer the solo content as it is right now. It's fun doing the license center and challenges and improving to get Gold. Particularly racing against your own ghost makes it feel competitive (against yourself lol). A full gold in each license also gets you another car from the final test of that license plus it will make you a better player.
