The price premium on this device is coming from a series of factors:

The 2-in-1 form factor. This includes a price premium for the touch screen. Plenty of new chromebooks will omit touch screen functionality, though obviously 2-in-1 designs all incorporate a touch screen.
The 12.2" screen size. The screen size for commodity chromebooks tends around the 14" size. Anything outside that range (larger or smaller) commands a price premium. This is notably distinct from the Windows laptop space where 15.6" has been the commodity size for some time.
The i3-N305 CPU + 8GB RAM + 128GB of storage. Though these specs might represent a bare-minimum Windows laptop configuration, this configuration should qualify for Chromebook Plus feature support. Most notably, this CPU is a strong performer in a chromebook. Though increasingly common, 4GB of RAM still represents the entry-level space in chromebooks and remains functional if limited.

Thanks. This is one of the not really YES answer. The tutorial is for CircuitPython. It is similar to MicroPython but the difference is enough that the solution only works partly, with the serial terminal program. The chrome apps mentioned in the solution only work on chromeOS but not on google chrome browser or android google play store. I wish google is more plugged into the hardware community than it is. So much has changed on the hardware level since google started that a $1 processor can run code at 240MHz with dual core and lots of memory and sensors and easy-to-access software suites that make them a heck of teaching and innovation tools. The two biggest game changers in such hardware platform, Arduino, and MicroPython are having a hard time with chromeOS. Maybe chromeOS isn't for education.

I have a few chromebooks and they all allow you to turn on "developer mode" to enable Linux.
My chromebooks are using debian linux which seems to support MicroPython.
After you enable Linux on your chromebook, you can install Linux apps and some Windows app via WINE. With 8G RAM and 128G storage, you can even try Virtual Machine to install Windows. I tried that once as a test.

I assume most chromebook can run Linux.

Thanks. Is enabling Linux considered requiring admin password? Once enabled, will admin still be able to control what a user can install? I'm trying to see how likely a school IT may say no to this solution.

I am not sure there is an admin login in chromebook.

Hmm, seems kinda high for a chromebook with emmc storage. If it were using ssd storage then it'd be somewhat tempting.

I wouldn't pay over $199 for this. But the 2-in-1 capability is clearly driving it up.

Google is degrading ChromeOS with their Manifest V3 war on adblockers, so I would replace the OS with a different version of Linux.

I am also a big fan of this notebook form factor. The size is in the range of a thick spiral notebook, but the price here is below the properly premium devices that usually live in this form factor range (like my first-generation Samsung Galaxy Chromebook).

Admittedly, anyone who doesn't need the portability would also benefit from the other specifications, though the best price/performance slickdeal was probably the CB514 deal that came in under $200 and could be stacked with a $50 discount.

It's just sad that there's no microSD port. But maybe the storage is upgradeable.
