Some thoughts -
1. The 3S is definitely quieter in its clicks but the 2S clicks are not something that'll bother someone.
2. Ergonomically they are the about he same. And buttons etc are not appreciably different.
3. USB-C on the 3S is a plus but you have to charge these quite infrequently so it's not as big a deal-breaker as some make it out to be.
4. The biggest problem with the 3S is that it uses the new Logitech Bolt dongle which is HORRIBLE. it is too prone to electrical interference if you plug it in the back of your monitor, your cursor will jump around so much the mouse is nigh unusable. It's comically bad. Just literally impossible to move to any button without overshooting it first. And somehow it's worse on Mac OS than on Windows. You have to use the dongle with a USB extension, and even then it's not a perfect experience. You just have to look at the multitude of reviews on Amazon. Of course, these problems go away if you use Bluetooth. So I'm using my work 3S permanently on Bluetooth. At home I would have preferred using the dongle since I use a KVM switch to move between my Mac and PC, but it's just unusable on Mac, so I have to press the button on the bottom to switch to Bluetooth. Just frustrating, cause otherwise it would've been a a perfect mouse. My keyboard also uses the bolt dongle so I'm continuing to use the mouse despite the major inconvenience.
4. There is no way to upgrade the firmware on the 3S mouse or the dongle (not sure if they released one recently). Edit — ignore this point. Seems that's outdated info. One can update the firmware now. There was no way for quite some time after its release.
Overall, the 2S is an excellent mouse and if you don't care about the bolt dongle of the 3S (the 2S uses the older unified dongle), I would recommend the 2S instead. It's cheaper and so much more reliable in its cursor motion.
