The hamming, are you referring to the comedy injected into some of the later films? Was it started in Voyage Home or especially Final Frontier? I figured it was due to the director.

Honestly outside of Patrick Stewart or Avery Brooks most of the core actors in ST (across the franchise) weren't exactly classically trained or stage talent. Suggesting most aren't the greatest actors in Hollywood doesn't seem like much of a jab but a fair statement.

FWIW I just watched V last week, not sure how many people could have liked that
Referring to 2 - 5, not just the comedy parts but the moments where the main actors would look directly at the camera (4th wall breaking style), do a evil smirk after (clearly) not taking that serious moment seriously. There were too many of those cases to count. Like they knew the scene couldn't be reshot and their reaction was not getting edited out. Kelley and Nimoy especially, even in 3 and 4 where Leonard Nimoy was the director this was taking place. Koenig and Takei too.
Now I guess I'll try to remember the next time I'm watching them to look for looks into the camera and smirks. Maybe, I did notice all of it but never thought about what it meant or even a second time about it. Or, maybe, since I'm sarcastic and have a dry sense of humor, when I mentioned comedy parts, I was actually including both the direct jokes and the subtleties that I think you are on about.
Just today I tried to watch Room 237 which is a movie about The Shining as I thought, "Oh, I love that movie, this should be interesting." I learned that I don't know anything at all about the movie as they proceeded to analyze it in slow motion pointing out all these things that Kubrick deliberately put into the film, including one scene where Kubrick himself's image is in the clouds. And symbolism of the Holocaust. Twas not for me, and I bailed out halfway.

EDIT: amazon was dead, walmart is still good
Christopher Lloyd rocked as the Klingon Commander, it's hard to believe just how good Doc was in the role.
