Yes, future proofing is out of the window.
But that being said it's a fantastic laptop. Good keyboard. Amazing screen. Good io. Fast CPU. For $300 you usually get some low end laptop with a bad screen, but you can upgrade to 16gb.
For the average person, this will feel like a much higher end laptop and feel like they got their money's worth for sure.

I was mainly stating that 8gb is still works well enough for most people who just need a laptop. And that this laptop feels very nice and higher end then your normal, run of the mill, $300 laptops.
Zenbooks are the premium models. Vivobooks (the slick deal you shown) are a step down in quality. Yes the specs are better but overall build quality is not as nice.
The biggest issue I had with Vivobooks are the keyboards. They tend to flex more and just makes the whole laptop feel cheap.

fyi the zenbook line is asus's more "premium" line, so it'll definitely look & feel nicer (which improves qualitative user experience), especially with its OLED screen.

I don't think people understand this and just want 16gb for the hell of it. Even though they may never go over 8gb in the first place.
People who need 16gb of ram know why they need it and can look elsewhere. But for an average person, with a $300~ budget on a laptop, this is really hard to beat.
