Maybe I will have to buy some bacon ... I never buy bacon as I don't like it and basically I never have a hamhock in the house unless I have just roasted ham. Do you cook the bacon first? Or put it in raw?

I used Enfamil Lipil and then the Enfamil AF - but if he doesn't like Enfamil I would try Similac I think ... Most people rarely under cook fish. The problem is that they tend to overcook it.

Although, if I'm feeling particularly naughty, I'll do a mayo or yogurt coating first, coat with crumbs, then dip in an egg mix and re-coat with the bread crumbs. Yeah... that's bad for you... lol.

Do the beans get really salty with the bacon?

Well when I am in the neighborhood I would love to hug I have never heard of chess pie (when I first read it I thought maybe you had been typing to fast and meant cheese pie but I looked it up and there it is chess pie) I have never had anything like it. It sounds REALLY sweet and I am not sure about the cornbread in it??? But I would love to try it! Course I love blackberries all on their own!!! When I was PG with my youngest I ate enough blackberries to rival the blackbears in the mountains I swear!! LOL

Could one just cut the fat off the pork chop - brown it in a pan - and then put it in with the beans or do you need the salt from the bacon? And for the bacon grease that you guys talk about cooking with - do you save it when you cook bacon? How do you keep it from going bad?

I love sweet cornbread - I make it and put it on top of chili ... but I also make it in muffins and you guys are right the sweet stuff is MUCH less crumbly then the regular corn bread.

Is Red Rice different from red beans and rice?

Our 4th of July meal was a meal I've heard about for years now - my ribs, homemade BBQ sauce, beans and cornbread have all had to live up to "how good" my guy's 4th of July cookouts were growing up. Same menu for decades with his fam.

Home now...

Shopped at Target and the JCP outlet.

For Target I will pm after I take a nap. Is that not what we are supposed to do when we have a day off? Nap when you want.
JCP outlet was not good. Well......Barely barely any tall clothes in the entire store.
The SJB( Saint John Bay) jeans I was looking for. Well I found ONE pair in longs... Not my size. Frown
Found some Lee Riders stretch jeans that were in longs. Look good on me, they were irregulars and the price was 9.99 a pair. I bought 4 pairs. So 9.99 minus 25% coupon that was mailed to select customers I didn't actually get one. I asked the cashier were I could find one. She found one in the trash. Smilie Crossed out the original customer name and addy which I didn't mind a bit. Recieved my associate discount too! Which only is 10% at the Outlet store. Grand total was under $30 for 4 pairs of jeans that would do for now.

Still need to clean some thing around here. Nap or put on the tv so I will clean?

Dia - Thanks... My DD called me at 9am and said the doctor screwed up and told her to be at the hospital at 9:30 and they called her at 8:30am and said she was supposed to be there already!! So she was in a panic, dropped the baby off and left.

Looked in her bag and she had bought some new bottles called Breastflow, it has a double nipple (one on the inside and one on top of that - if that makes sense)

I tried the Similac that I bought in the new bottle, and he fused for a min, but then took it no problem.. so Yeah!!

After her surgery she says the doctor told her to empty the first breast milk and then she's good to nurse again.

He bit her yesterday (with his gums) and it hurt her, so she said first bite with teeth and that's it... he's going to a bottle.. LOL

Emmi is biting with her 6 new teeth she got in 3 days time. You would think after nursing 4 other babies I could mute my screams when bitten but no way and she hates my shreeks. It starts in a talking voice then progresses as a "dooooonNNNNNNNNT B.I.T.E MOMMA!!!!!' and she gets so upset that I yell but goes and bites me again right after. Roll Eyes (Sarcastic)

dia, red rice is just an old local dish. SC originally farmed rice, so we have alot of old recipes specific to this area. There are lots of different ways to make it, but here is a couple of easy ones. I sometimes add breakfast link sausage in mine to make it a meal instead of a side ( I cut the sausage up into pieces)

4 strips bacon
1 onion chopped
1 small can tomato sauce
1 tsp sugar
1 1/2 cup water
1 1/2 cup rice
salt and pepper to taste.

fry bacon, remove and add onions to drippings and saute until clear. add tomato sauce, water and sugar. Bring to boil and cook for 15 minutes. Add salt and pepper, then add rice. Reduce heat and simmer covered until all liquid is absorbed. (usually around 20-30 mins)

Buttermilk pie doesn't have cornmeal in it. It's very simple and like a custard pie and perfect for tart berries.

1 stick butter
2 cups sugar
3 eggs
4 to 5 rounded tblsp flour
1 cup buttermilk
1 tsp vanilla

mix the butter and sugar til fluffy, add flour and mix til combined. beat in eggs, one at a time. by hand mix in buttermilk and vanilla. pour in a pie shell and bake 350* for 45 to 50 minutes. Done. It's a very easy and quick pie to make.

for Peas/Beans....Yes, fry your bacon first until at least semi crispy, then add the peas, water. Just a couple slices bacon wont make it salty. If you are worried about the fats, try smoked turkey necks for flavoring.

Thinking about making Tootsie's Chops tonight for dinner. Just a quick question. What kind of rice do you use? I assumed just regular white rice but wondered if brown would be just as good.

Am I supposed to put some kind of fruit on top of this pie? Or chocolate? I've never tasted it so I can't begin to think what would be tastey.

you dont have to put anything on top of it. Whipped cream if you want, or since it is such a sweet pie, a tart berry sauce is good too. I eat it without any topping.

It's really not a fancy pie. Just a plain custard pie. I think one of those old recipes that were created out of simple ingredients that people had on hand.

Dia.....Now we know why Kyron's dad moved out and got a restraining order Bigeye

The day he moved out, police found out the stepmom had tried to hire the landscaper to kill the dad 7 months ago. this gets crazier every day.
