Also remember if he is adjusting from BM to a bottle that it may take some adjustment regardless of the formula you choose. You might have to try several times for him to like it. HUGS HUGS HUGS
Most people rarely under cook fish. The problem is that they tend to overcook it.
Although, if I'm feeling particularly naughty, I'll do a mayo or yogurt coating first, coat with crumbs, then dip in an egg mix and re-coat with the bread crumbs. Yeah... that's bad for you... lol.
And I think the peas may also be called crowder peas - but I could be really wrong on that.
Oh, and for southern cooking - cooking pretty much ANYTHING with ham hocks, bacon, or salt pork is an automatic "Yes, do it..."

I have asked my Mum to teach me how to cook fish because she eats it frequently but she so far she hasn't --- ah well --- I will try some of your suggestions. I *should* be able to figure it out.
Hmmm - will look up crowder peas. And with the coating once and then recoating does that make the breading on the meat really thick & cripsy like Kentucky Fried Chicken? Cause that is too thick for me ... I am someone who pulls the skin off chicken like that and I don't eat it. LOL
Do the beans get really salty with the bacon?
I think we should have a potluck - I will make a fruit salad and bangers & mash!!!!
I usually use bacon. If I have hamhocks I'll use them, but bacon works just fine. And Dia, it doesn't matter that we are having pork chops too. Can't have too much yummy good flavoring
I'm southern, and true southern cornbread does not have sugar in it. When we put sugar in the mix, we bake it in muffin tins and call it cornbread muffins.
Another dish we have alot is Red Rice. It seems to be a very local dish to SC, GA. I'm curious if Tootsie has heard of/made this. It's a staple here at any church social, family reunions, etc and oh so good!
Could one just cut the fat off the pork chop - brown it in a pan - and then put it in with the beans or do you need the salt from the bacon? And for the bacon grease that you guys talk about cooking with - do you save it when you cook bacon? How do you keep it from going bad?
I love sweet cornbread - I make it and put it on top of chili ... but I also make it in muffins and you guys are right the sweet stuff is MUCH less crumbly then the regular corn bread.
Is Red Rice different from red beans and rice?

Our 4th of July meal was a meal I've heard about for years now - my ribs, homemade BBQ sauce, beans and cornbread have all had to live up to "how good" my guy's 4th of July cookouts were growing up. Same menu for decades with his fam.

JCP outlet was not good. Well......Barely barely any tall clothes in the entire store.
The SJB( Saint John Bay) jeans I was looking for. Well I found ONE pair in longs... Not my size.
Found some Lee Riders stretch jeans that were in longs. Look good on me, they were irregulars and the price was 9.99 a pair. I bought 4 pairs. So 9.99 minus 25% coupon that was mailed to select customers I didn't actually get one. I asked the cashier were I could find one. She found one in the trash.
Still need to clean some thing around here. Nap or put on the tv so I will clean?
Looked in her bag and she had bought some new bottles called Breastflow, it has a double nipple (one on the inside and one on top of that - if that makes sense)
I tried the Similac that I bought in the new bottle, and he fused for a min, but then took it no problem.. so Yeah!!
After her surgery she says the doctor told her to empty the first breast milk and then she's good to nurse again.
He bit her yesterday (with his gums) and it hurt her, so she said first bite with teeth and that's it... he's going to a bottle.. LOL
And of course the eggs from my own free range chickens. And sea salt, and unhomogenized milk, and, well, you get the idea.

4 strips bacon
1 onion chopped
1 small can tomato sauce
1 tsp sugar
1 1/2 cup water
1 1/2 cup rice
salt and pepper to taste.
fry bacon, remove and add onions to drippings and saute until clear. add tomato sauce, water and sugar. Bring to boil and cook for 15 minutes. Add salt and pepper, then add rice. Reduce heat and simmer covered until all liquid is absorbed. (usually around 20-30 mins)
Buttermilk pie doesn't have cornmeal in it. It's very simple and like a custard pie and perfect for tart berries.
1 stick butter
2 cups sugar
3 eggs
4 to 5 rounded tblsp flour
1 cup buttermilk
1 tsp vanilla
mix the butter and sugar til fluffy, add flour and mix til combined. beat in eggs, one at a time. by hand mix in buttermilk and vanilla. pour in a pie shell and bake 350* for 45 to 50 minutes. Done. It's a very easy and quick pie to make.
for Peas/Beans....Yes, fry your bacon first until at least semi crispy, then add the peas, water. Just a couple slices bacon wont make it salty. If you are worried about the fats, try smoked turkey necks for flavoring.

It's really not a fancy pie. Just a plain custard pie. I think one of those old recipes that were created out of simple ingredients that people had on hand.

The day he moved out, police found out the stepmom had tried to hire the landscaper to kill the dad 7 months ago. this gets crazier every day.
