You dont have to do this necessarily as the verification code they send when you are purchasing the phone doesnt have to be the phone number you are porting. You can get the verification code on any number then when you port a number over you can use the number barn number for $5

Yes, but nobody sold you something for $125-200 under retailer wholesale cost.
You get what you pay for.
You can buy this phone for more without the requirements.
If they did not require this some folks would buy dozens to resell (which I have no exact issue with other than it make such a deal impossible to offer)
Decide for yourself.
It's really no different from walking into T-mobile and signing a contract to get a 'free' or subsidized iphone. They take your id there.

I think they try to stop people that buy this stuff for parts for example. Genuine screen for iPhone 13 is probably $200 alone.

The problem with ID verification is that their computer software has the potential to scrape all info, including sensitive stuff like the ID number and Date of birth. Not worth some $100 savings in my opinion.

It's a brand new phone and you can use it anywhere in the world. Check which bands your network is using and compare them with this phone.

This third party company -- who retains this information? how long do they retain it? will they sell it? can i request it be deleted? who is the independent oversight to ensure my data (a driver's license is considered very protected) is being handled correctly?

...sadly, none of those questions will be answered -- and if they are answered, probably not honestly. Which means literally the worst is going to happen with your data. I guarantee you. No amount of savings is worth the identity theft.
