I would be hesitant to buy directly from AceMagic. I bought one of their computers from Amazon that had a bad port. I tried reaching out to AceMagic for support a couple times and they never replied. Luckily, Amazon gave me my money back. But I am sure AceMagic would have just ignored me forever.

Can this play games?
Yes.

If you are realistic and understand it's a tiny mobile processor and can't compete with a new GPU that is bigger than the whole computer.

Low to medium settings, and 720-1080p for 30-60fps and you can play most games. Youtube has reviews that show gaming performance

Are these mini PCs solid as home office computers? Just need a windows computer for email, youtube, internet browsing, etc. Dont mind spending more though for a entry level type gaming computer. TIA
Yes, they are very solid for that and would last you a good number of years for the tasks you mentioned.

This is a so-so deal. Last July I got the Kamrui branded Ryzen 7 7735HS version of this in a 32/512 configuration for $292. AMD naming conventions confuse things but it's basically low single digits % faster than this one in most areas. I returned it because the NVMe/SATA area has zero ventilation. SATA SSD worked fine but NVMe would cook and throttle under normal usage loads. No malware was present.

If I replace the NVME hard drive and reinstall Windows 11, will it get rid of the malware, or is the malware baked into the motherboard?
The repetitive complaint about the malware is getting boring and old now. A series of their desktops had that issue, and the people were right to call them out for it. However, what's not right is painting all their products with that same brush. Every manufacturer has some issues with their products every now and then; Lenovo with their hinges esp on their previous IdeaPad Flex lineup, ASUS fiasco, and malware with Ace Magic here, and so on. However, all these problems were old and have then been fixed but the people feel the need to comment the same thing on every thread.
Ace Magic included a script that wasn't fully compliant with Windows standards, which led to such "malware" detections. However, after being whitelisted, Windows Defender now confirms that there are no issues.

You should try answering the question instead of proselytizing.

You should try reading and understanding the comment. The malware isn't malware to begin with, and I explained why it was detected as such previously.
Changing the NVMe would not remove the "malware;" you'd need to perform a full clean wipe.
