You're comparing apples and oranges. The sign up bonus on the Disney Visa is not limited to Disney spending. Anyone can sign up for that card at any time and use it for anything to get the bonus. If you're into the credit card churning game, it's not that great of a card to burn a 5/24 slot on, since it's terrible for everyday spending and the sign up bonus is meh. However, it's a decent card to have when you're going to the parks for the 10% discount at stores and some (definitely not most) restaurants, as well as the occasional cardholder-exclusive discounts for hotels, but for the bulk of your trip spending, the gift cards are usually the way to go. You can use them for tickets, hotel, lightning lanes, and just about anything else on property.

This works for restaurants, but the gift cards work for park tickets as well which the Disney CC does not give a discount for.

Good deal especially combining it with Discover if it counts for a warehouse store. If you buy the maximum that's $800 in gift cards for $720 plus $36 cash back. Literally $116 of free money if you plan on going to Disney anyway.

Plus if you are staying at a Disney resort you can leave a credit card at the start then anytime 24 hours before your checkout you can go to the front desk and pay down your balance using the gift cards.

Also disneygiftcards.com, which is actually run by Disney, will let you register your cards and move balances between them. So what we do is register all the card, consolidate the money between two of them, toss the old ones that now have $0 balance, and then me and my wife each carry one. This way if we forget one in the room or lose it we can just login and transfer the balance to the other one. Although once you get used to just paying with your magic band you'll usually not take then out at all.

Just a warning, many airlines (I know specifically Delta) will only allow you to use their gift cards for the flight itself and NOT on anything extra like bag fees and picking a seat. In fact, according to the terms and conditions,

"A Southwest gift card is not valid for the purchase of Southwest Vacations Packages, cargo, hotel, rental car, Southwest Airlines merchandise, Southwest Airlines group tickets, EarlyBird Check-In®, oversized ,overweight, and excess baggage fees, Upgraded Boarding at the airport, Pet Fares, Unaccompanied Minor service charges, additional Southwest gift cards, or inflight purchases. Sales tax, security fees, and Passenger facilities charges may be paid with a Southwest gift card."

So from the parts that I underlined and bolded, it would seem that you will not be able to pay baggage fees with the gift card. (I am assuming the only reason they haven't written it in the terms and conditions is because at present there are no baggage fees.)

If you book before 5/28 and have a travel date after that you can still get free bags.

At least for Disney World, after booking a package there is an amount that is due. You can apply as many gift cards as you want to bring the balance down. You don't have to apply them in one transaction. I've booked packages that are like a year out and then slowly find gift card deals leading up to it and slowly bring the balance down when I can with each gift card deal.

I'm not saying I would advocate for this, but the most equitable and fair way to charge for flights is by weight. I'm talking body weight and baggage as a percentage of total cargo. More weight should cost more just like transporting goods for freight. Obviously, that means you wouldn't know the cost until you get to the airport, but it would certainly motivate people to not only pack lighter, but also to lose weight. Logic is always skewed by sentimental feelings and people being offended, but it is the absolute fairest way to charge for transporting when cargo weight and fuel are essential to calculating profits.
