Trikes get better and become much more stable if you lower the center of gravity (recumbent) and/or go for the 'tadpole' config with one wheel in the back and 2 up front for greater turning stability.
After looking at this model closer, I have to say I don't like the front wheel drive hub motor or the comically small 48v 4AH batteries (2x2ah?) included. Most respectable 2 wheeled ebikes start at 15ah of battery capacity.

I just assembled it for my 76 year old mom. It wasn't very hard and here is the instruction video [youtube.com]. Note at 3:45, you need to adjust/tighten the frame to make sure the chain is not too loose. This step wasn't mentioned in the manual itself.
Tricycle riding is quite different than bicycle. It does take some time/effort to get used to. The major difference is that you should keep your body straight up on tricycle, otherwise if you lean your body like when riding a bicycle, you will feel quite unstable on a tricycle. Also be very careful switching between tricycle and bicycle, my mom fell off the bike a couple of times after getting used to the tricycle.
