I'm wondering the same thing. My Ultrabook with 16gb RAM and i7-8550u is 7 years old and runs out of memory with many browser tabs open.
At 16gb you'll be more than fine

I'm keeping an eye on the Mac mini-PCs . How many tabs do you guys use? With my browser and all its tabs open, plus the game I always have open it's 3gb used. So with 16gb and 70% in use it's looking like Windows is gobbling up around 8gb. That's A LOT.
Can you guys do some quick math and subtract out your running apps to see how much the base OS consumes please?

It's not like windows where it takes a month to fill the standby memory. The cached memory is used off the bat..so there's not much "free" memory to begin with..maybe 2gb? I have an older 8gb MacBook Pro and a newer one with 24gb..but both have substantial cached memory usage right at boot..
So getting a calculation is difficult, it doesn't run like windows. I can just tell you that you'll be fine with 16gb. But what game are you talking about?
