Obviously the safest thing to do if you're planning on doing this is to root it during the return window on the off chance it bricks.

That refurb is the exact same model that's now $100 new, and Slickdealers were unable to get it to root afaik. There's no seperate root guide for that model and the xda thread in the wiki calls out the 2023 11" model as unable to be rooted.
There's a 2024 11" pro model that has an xda thread for rooting:

My kids have used fire tablets for years. Always seemed like a no brainer with trade ins and sales.
Recently side loading has become a chore, seems like something is always getting messed up. Overall the bloat on the fire tablets is increasing.
For $50 each,this is worth a try, I'd prefer Samsung but 3 tablets for the price of one. If they work as well as a fire tablet, this will last them a few years.
Can maps be moved to SD then?
Figured I can tether using my phone for data usage. Also, I think Google Maps now offer offline map usage?
