Ceramic isn't a great option for your camping bin that gets tossed around because it's more fragile and too heavy.
Steel isn't a great option either. If you've tried those stainless steel salad bowls from IKEA, you know that the bowl instantly heats up to the same temperature as the hot food or soup you put inside, burning your hand/ lap and making them for that purpose unusable. I've personally put a single layer steel bowl into a plastic bowl as a remedy.. it's a bit spill prone in your lap because it can tilt easily when nested in another bowl.
Personally those wheat bowls all over Amazon like the ones linked here are much lighter and cheaper option. The only problem is that while they state they are made of wheat and bpa free, they are generally composite and have plastic.

Between this or the 3qt what is more useful?
Not sure why this seems particularly esoteric but I have a number of products in this line so I'll bite. Special camping reasons or opinions on the use of plastic vs metal aside, I use these for bbq's, potlucks or when I bring food to the pool. They're double wall insulated so keeps things cool or hot as needed, has a lid, is reusable/durable and isn't glass - which isn't allowed on pool grounds. I also have a number of friends with backyard pools who are strict about glass in the area (for good reason). The 1qt size is a bit limiting (though they have bigger sizes) but these are still pretty nice to have.
Between this or the 3qt what is more useful?
Sell me on the use-case here.
