Google FI is terrrible in my area, where it runs on T-mobile. I suggest you to do a 7 day trial....before committing to switch to google fi.
All carriers run insane deals to attract new customers (and those offers are likely to continue to increase as the US wireless market continues to mature to the point of almost complete saturation as it stands currently), so the best leverage a customer has is to carrier hop / promo chase.
At the same time, that's also why all of the carriers offer these promos as "bill credits" (that you lose if you switch carriers or pay off the device early) so that they can lock you in.
Basically pick the shortest term promotion that gives you the value you are looking for, and then the moment that promotion is done (i.e., you've received all of your bill credits) and/or the moment you find a better deal that makes it worthwhile to switch (i.e., the value you're getting by switching offsets the forfeiture of the remaining promo you are currently on), promo hop to another carrier to take another new customer offer & then continue to rinse and repeat.

I'll always have a soft spot for T-Mobile, because they're probably one of the only providers where, if you played your cards right and stayed a long time customer, you could get a really, really good deal. There are people in the T-Mobile subreddit with 8 lines, unlimited everything, free hotspot, free international roaming, for like $120/mo total ($15/line). That's crazy! But if you were around to stack the free lines, insider discount, etc., that's what you got.
That era is over, though. I don't think you'll be able to collect discounts over the next 10 years like you could over the last 10 years. But I still think that's a strategy somebody should employ for retention going forward. So many people will never leave T-Mobile because they've got like 10 years of discounts they don't want to lose.

I did an almost identical offer back in March (4xiphone 1, $120 per mo, 36 mo. with $200 gift card), here is my breakdown: We went with 2 16's then paid extra to move up to 2 16 pros, 256 storage. You pay tax on the full price of the phones. First bill was about $90 higher at $260, then subsequent bills were about $175. We added apple one family for $20, Netflix/Max for $10. Fees per line come out to about $6.50. To get the full discounted price, you will need to sign up for auto pay. Unless you have a Verizon credit card, this will need to be an auto debit from your bank account and not a credit card.
The customer service chat is the worst I have ever seen. You will run around in circles if you need anything other than a basic question answered. Even then, they are just terrible. I had the worst time trying to get the $200 rebate. After several months of going in circles with the chat and calling, never receiving the escalation phone calls i was promised, I got an email from the "CEO's desk". There was an email address to reach out with any problems, so I did just that. Within a week of sending the email, I got a call back from a supervisor here in the states who ended up just crediting my account the $200. He was awesome, but frustrating that it took that long to get the rebate taken care of.
I was coming over from Visible & spectrum, and I live in an area where T-Mobile is very spotty unless we are on.near the interstate, so they were not an option. All in all, we get the same coverage we had with Visible/Spectrum, and when you factor in the add-ons that we were paying for al a carte prior to signing up, we are paying about the same. The only difference I can see is that we lose the limited hotspot (which we never used anyhow).
