Every year I forget to buy a brine kit for my turkey ahead of time, and can never find one. Remembered early this year and low and behold, on sale and free same day delivery for W+ (For me at least.) Couldn't find this anywhere close to this price else where.

Dude it's October. I can't believe we're already doing Thanksgiving. They had the turkeys out today for $.84 a pound at Walmart. That was a pretty decent price I thought. It takes freaking weeks for a turkey to thaw though so I can kind of get it.

Sadly, if you wait till a week or two before Thanksgiving, you won't find any brine kits available. So better early than none
Brine kits are practically pointless. Use kosher salt, do the conversions or measurements required. Use an injectable marinade instead of or after brining, this keeps the flavor in the turkey rather than it washing out when you remove the brine. Personally I like to brine and then do a custom injectable marinade:
Injectable Marinde for a 10Lb Turkey
1 cup canola oil
— or ¾ cup olive oil + ¼ cup water
2 tbsp lemon juice (I like Volcano brand for this, really gives it a good flavor)
1 tbsp apple cider vinegar
1 tbsp fresh rosemary, finely minced or gently bruised
1 tbsp fresh thyme leaves
1 tsp onion powder
0.5 tsp garlic powder or 2 tsp garlic puree
1 tsp ground black pepper or white pepper (depends on whether you want powerful or subtle flavor)
½ tsp paprika
Metric (4.5Kg Turkey):
240 mL canola oil
— or 180 mL olive oil + 60 mL water
30 mL lemon juice (Volcano brand recommended — bright, clean acid)
15 mL apple cider vinegar
3 g fresh rosemary, finely minced or gently bruised
2 g fresh thyme leaves
3 g onion powder
2.5 g garlic powder or 10 g garlic purée
2.5 g ground black pepper or white pepper (depends on whether you want powerful or subtle flavor)
1.5 g paprika
Experience: 8 years of frying 20lb Turkeys, 6 years of slow-roasting turkeys, plus 4 smoked turkeys. Works for all 3. Tweak the marinade to a flavor you like. Alternatively Tony Chacerie's Injectable Marinade is good, but salty, and a bit expensive. It does come with the injector needle, which is handy.
