I'm contemplating because I want to use open-source software, which is highly restricted on my MacBook. However, I'm worried that if I spend 1000 bucks on it, it might also die like my old Dell.

Macbooks are great, but when it comes to open-source software, I found myself having fairly limited options. I had our IT provision a Windows VM so I could log in and use Windows for when I need to perform specific tasks. On a personal machine, I require large amount of SSD space, and Apple charges premium for that, so open-source and storage being bottlenecks.
I think you just need to run through what you do most and if Macbook would be a better option.

the Core Ultra 7 258V in this deal has better single core performance, worse multicore(because it has less cores and better battery life), better performing integrated video card.

I really love smoothness and life of MacBooks but can use whatever software on windows.
If you play games, or have a chance of needing programs that are not supported by Mac, then get something like this... or Dell Premium, or Asus S14, or Microsoft Surface with Intel, Windows with Lunar Lake have really great battery life (relative to past window laptops) and the one listed has really good battery life also. Integrated Arc graphics also very good. Build quality in this listing is also very good as are all the other ones I've mentioned.
