I don't want to stack because if I did, I would not be able to unlock the 2nd one. Or could I stack the plan on 1 SIM and use it in 1 phone for 2 months, unlock it, then move the SIM to the other phone, and it would be able to be unlocked after 2 months as well?
If so, that would be nice.
You can activate 1, use it for 60 days, then activate the 2nd on the same phone number. The plans will stack together, and you'll have 2x unlocked phones after another 60 days, on top of doubling the year/data/txt/min. One disadvantage would be that you'll need to setup your apps/stuff again on the 2nd phone. Side note: Avoid taking out the sim and switching to the other phone. There have been warnings that if Tracfone realized the sims have been moved, your service may be suspended.

Tip: Given that there will be ~4 months of service in this scenario, make sure to claim referral and reward points during 1st activation. They would have vested after 120 days, and can be redeemed for more data (~9Gb using sign up bonus). If you already have a Tracfone account older than 14 days (which sounds like you do), consider creating a new account.

I don't have Tracphone, and don't really plan to use it, I mainly want this for the phone.
So if I follow your steps, I would activate the 2nd phone using the first phones number? Keep each sim that comes with the phone in the phone it came with as well?

I did order a cheap case off Amazon that comes with a screen protector (I ordered the marble one since black and blue were sold out), it it comes with a screen protector, so I should be good.

After this is done, you will see that all 3 phones appear on your account with only the most recent phone showing as active. Then "activate" your first phone and deactivate the most recently purchased phone.

Correct. Tracfone will ask you if you want a new number or keep existing during activation. Choose to keep existing when activating the 2nd, then enter the 1st phone's number. Your balances would be merged to become 2 years (or 22 months at that point to be exact, but who's counting).

There's a Rewards page on your Tracfone profile after your 1st activation. Others can likely point you to a better usage guide than me.

Tracfone sim cards are said to be married to the phones they came in. I personally haven't had the need to remove any, although on a side note did experience a strange "resurrection" of a phone number deactivated a year ago, onto its original sim via a wildly incompentent Tracfone CS. It was a good thing at the time that I kept all sims in their original phones, otherwise would not have been able to authorize recovery of my actual number.
