Very little difference between d7, d5, d3. But if you can get a d7 cheaper than a d5 or even a d3, then go for it as long as you're aware of the drawbacks of the increased layers

Weight mainly. Also slower to heat/less responsive but better heat retention and distribution. It's a little bit more like cast iron on those regards.
