I'm new to iPhone, sorry if this is a silly question, but why would I want to attach a wire to this wireless charging mount only to wirelessly charge my phone? Wouldn't it be the same / better to just use a basic mount and plug the USB C directly into the phone?

Purely for convenience, you don't have to fumble with the wire, you just leave the charger plugged in and magnetically slap your phone on.
USB-C charging can be faster (my Pixel 10 Pro XL can do 45W wired) but Qi2.2 25W is fast enough for me.
Wireless charging has the additional downside of more heat which is bad for batteries, so especially for Qi2.2 25W, you want your wireless charger to include some sort of cooling. This one includes a fan.

You could argue that fast charging via a USB-C cable (speeds up to ~45W) is worse than the heat of 25W Qi2 charging.

To ChintanS, having a Qi2 charger in your car is super convenient because it's always positioned where you want it, magnetically attached, and charging at a reasonably fast (but not too fast) speed. Plugging and unplugging cables is always a bit clunky when you have to do it often and have somewhere to go.

This or the 15W version with TEC/Peltier cooling?

Seems like the TEC one would cool better, but it's not going to be in direct contact with the phone and phone maxes out at 15W wireless charging.

Edit: went with the 15W TEC version, might as well take advantage of the better cooling and no point going past the 15W limit
