4) I thought even after you pay off, your device stays locked for 40 to 60 days depending on carrier, and you continue to pay for services during that period.

You could also say in the AT&T chat that you don't consent to any additional charges and that since you've cancelled the line within the first 3 days you're expecting to be properly refunded like is outlined in corporate's policy.
Screenshotting the whole AT&T chat is so you have proof about you trying to cancel the account within the first 3 days. Legally in most cases, if it's not in writing (or has evidence) then it didn't happen…
(I'm not a lawyer, but it's a pretty accurate saying, imo)
Plus you could use the screenshots as proof if you later on need to dispute the charges with your credit card company.
