Bought this when it was $30 from Walmart. Actually works very well.

Important to note that it's app only. There are no controls on the device other than a power button.

You do not need to pay subscription to use it unless you want wifi capability. It is free to use via the app/Bluetooth.

Overall it's pretty good but during a cook the app can struggle to refresh if you leave and come back to it so what I do is close out the app entirely and reopen and it has consistently connected after that. Not too bad of an issue but worth noting

these are great, easiest example is for meat- you're not boiling them, you're holding them at specific temps so that the proteins behave certain ways. e.g. 144°F chicken breast is more or less rare and safe to eat because it's been pasteurized, but the meat won't get stringy or tough because that's a side affect of being exposed to high heat.

great stuff- lots of kenji articles on serious eats about it. buying a couple of these to hand out as gifts, lol- annoying to have to use app to set it, but it's 20$ a pop which is less than aldi's cheapo SVs when they have them randomly.

I bought this recently, and just to clarify: a subscription is not required to use the sous vide. The app does promote a subscription, but one can navigate past it and use every function of the device without paying anything. It's a fully usable, no-cost experience as long as the app remains available.

850w is the relevant number, and that's a decent heater. Could start with hot water if pushing the limit, but I don't think that would be an issue with a home sized cooking vessel and this device.
Yes. I have the Nano 3.0 which is 800 watts and I use a 6qt container I start with warm water and a target temp of 132F for medium rare steak and it fits 4 individual vacuum bags each with an 8-10oz filet. Perfect every time.

Good price, but keep in mind that new users will need to pay a monthly $10 subscription for the full app. If you are grandfathered in, great.
I have one of the old Anovas from maybe 15 years go. Thought about buying a new model, saw that, got some emails from the company about blocking out services, said "never again".

Will buy another brand. Screw putting subscriptions on my cooking devices. That company can die for all I care.

When Anova announced the monthly fees, I decided to never buy another Anova product.

You vacuum seal the food, seasonings and whatnot and then it slow cooks it all together without any loss of flavor or nutrients. If you do a piece of meat, you would typically sear it after cooking in the sous vide.

They do a good job because a lot of other cooking options cause your flavors to get watered down or cooked off.
You do not need to vacuum seal to sous vide.

What do you use these for? I don't understand them. Does everything just taste like the restaurants where you boil your own food in front of yourself?
You make duck leg confit and butter poached potatoes with perfectly crisp but tender asparagus. I love mine.

No controls/app required = hard pass.

If something is free (or this cheap) then you're the product for sale...more specifically your information, habits, eyeball time for ads, and obviously the upsell for a totally unrealistic $10/month. The rare circumstances where I'd need to turn on a SV at an exact time while not home I can count on one hand...and it would be trivial to build in a delayed-start timer. But nah, get they app they say. It'll be cool they say. We won't (get caught) stealing your info they say.

Nope.

The app control is definitely what's keeping me from gifting this to my parents. Mine has buttons. That's better.

if the app crashes does the machine turn off or reset?

The app doesn't crash. It's just trying to reconnect to the anova.

You don't need the app to actually run it. You only need the app to set your temp on the device and check current temp

It means that eventually they will stop supporting the device in their app, and it will become a paperweight. This is not theoretical, they already removed support for some of their earlier models - but at least those have physical controls, you can use them without the app just fine.

I had the 1.0 model too. I like to use it inside an insulated cooler. Styrofoam works best, with a plastic bag liner (hot water will seep through styrofoam) and the lid cut out to accommodate the unit.

This is outrageous! Cuisinart did the same thing with one of theirs. They discontinued the app, and now the unit cannot sous vide.
