Don't you need to convert the mass of sodium to the mass of sodium chloride?
0.610g sodium per serv * 1200 serv = 732 g sodium
Sodium (Na) is 22.99 g/mol while table salt (NaCl) is 58.44 g/mol, so about 2.54 g NaCl per g Na
732 g Na * 2.54 g NaCl per g Na = 1859 g NaCl
1859 g NaCl / 453 g per lb = 4.1 lb NaCl
4.1 lb NaCl / 7.9 lb bouillon = 52% salt by weight.
Converting to volumetric percentage isn't really easy, but if a teaspoon of table salt is approximately 7g, then 1859 g table salt is about 266 teaspoons, or 5.54 cups.

I think your approach is well thought out.

We can glean a few important things from the label.

They are giving us a value of 3 grams per serving total weight. Of that 3 grams, 620 milligrams are made up of sodium.

Using simple math, that puts the percentage of sodium at just over 20% by weight.

Again, using simple math, 20% of 3.6 kilograms (7.9 LBS) would be 720 grams (1.58 LBS) of the total by weight is sodium.

I really like "Better Than Bouillon". They sell it at Costco. Organic and it has to have less salt than this.

If you suffer from migraines, be aware that this has a large amount of monosodium glutamate/MSG. Tastes delicious, but is a huge migraine trigger for many people. Good deal though.
Plenty of scientific studies have been done on MSG, for decades. Not a single one confirmed that MSG causes migraines.
Pizza contains a large amount of MSG, do you get migraines from it?

Scientific studies or not, I definitely get a raging migraine anytime I accidentally ingest salad dressing with MSG, snack foods with MSG, etc. Red wine is a trigger for me as well. I've learned to be a good label reader over the years. Pizza is iffy for me. Certain types of cheese and some pepperoni gives me a lesser migraine. I tend to stick to a locally owned pizza shop, and the owner lets me know if they change suppliers.
If anything, it's more likely an individual sensitivity or allergy. MSG itself hasn't been shown to directly cause migraines.

I hope you have a vacuum sealer to store. Otherwise, depending on humidity. will last maybe 2 yrs after opening. Also somewhere between 850 to 1000 Tsp of salt in it. Which is about 19 to 20 cups of salt.
yeah and? you need salt to live. i've used up half of the jug i got last year. it's a great seasoning in soups and stews.
