Yes, they all harvest data, which is why the HiSense TV that's behind my Nvidea Shield is not on a network. Only the Shield has a network connection. That way I don't have to worry about the HiSense phoning home with my personal data, nor do I have to worry about anyone accessing the cameras or microphones on the TV. That said, this post is about the Roku devices which is why I didn't make any mention of the other devices, but you are absolutely right. They are all terrible when it comes to exploiting personal data. Amazon's Firesticks are even worse.
Horrible company.

This has also been in the news over the past year or so with various states bringing lawsuits with the latest being Texas.
Camera and mic aren't needed to glean ACR data. ACR is the mechanism that harvests your data, button pushes, what you're watching, how long, how often you change channels, shows, etc. This data is shared (sold) to the content providers (among others) to target you for advertising, products, etc.
Under the hood it's much more complex than that but that's the jist.
Coupled with a microphone and camera - it's beyond intrusive
Some of us are not so willing to acquiesce and we keep the fight going on every front we can. If you want to give up. roll over, play dead, that's certainly your option. A person can actually have an impact of stemming that theft of their PII. Sometimes by depriving them of it. Sometimes feeding them misinformation. Remember, the only thing better then given them no data is given them bad data.

They take screenshots and send it off?
That's an absolute no go.
