Jack Links uses nitrates in the form of "cultured celery extract".
And just because it's "natural" doesn't make it any better for you,
Nitrates are used as a preservative and I appreciate that because I don't want spoiled jerky.
It's also a way for Jack Links and other manufacturers to remove sodium nitrate from the label to make people feel better.

I want to add that using cultured celery extract does nothing but increase the price of the end product unnecessarily so that people who don't know any better will buy the product just because "nitrates" aren't on the label. This is what happens when consumers know nothing about chemistry.

And an aside, the celery can impart a flavor in some products. Some of those "free of" hot dogs (looking at you, Applegate) are just gross.

I like dry, tough jerky. Last bag I had of this I left open at room temp for several days. It got drier like I wanted, but it did not "go bad". No mold, no bad flavor, etc. if yours got moldy, probably was a bad batch and you should email.
