Since I only started using it, I'll have to see if it holds up when summer rolls around. The first time I used it, the butter definitely fell in, but that was because I was in a rush and just tried to smash a completely cold half-used stick in there. Haven't had a problem in the last 2-3 sticks. Changing the water hasn't been an issue for me, I will do it around the time I'm doing the dishes, which is daily, so I haven't had any mold related issues, but I guess that's not for everyone. Luckily it doesn't need that much water to fill.Overall, it's a little more maintenance than just keeping the stick in the fridge, so I can see why it's not for everyone, but keeping it spreadable has been great for my family so far, especially my kids who aren't patient enough to wait for it to soften up.

That said, I just don't like this style of butter dish for all the reasons currently listed. If you KNOW you want this style of butter dish then by all means get this, but be aware that there's a learning curve associated with French-style butter crocks.

It molded every time, even when I used distilled water in it! Meanwhile I leave butter sitting on the wrapper on the counter for two+ weeks and it's never molded! I actually just found it last night cleaning and threw it in the trash lol
