These appear to be the version which do NOT come apart easily for cleaning.

Good catch.

I love my Kershaw kitchen shears, but keep a pair like this for non-meat cutting kitchen tasks. The kershaw scissors are wicked sharp, easy to cut up chicken etc.

I prefer the ones taht can be easily cleaned for kitchen use.. These are fine for general use

Had these. They don't come apart and the bolt eventually rusts if you dishwash and the handles get gummy but it takes years to happen.

Since these can't be washed well, I wouldn't want to use all the food "features" they have on them. At that point, might as well just grab a few pairs of $1.78 Walmart Mainstays kitchen shears for general household use.
