These don't have any buttons and require the App to use. It's free, but it's a little annoying to have to pull out my phone every time I use it. That said, I use mine at least 2-3 times per week. Mine has worked flawlessly since I got it about 6 months ago. I've definitely gotten my $20 out of it.

Nothing really to be said that hasnt been said before in the numerous times this gets posted (exclusively by staff). No physical controls, app control is free (for now). No guarantee that will persist.

That's not steaks, that's roast beef, 165F is way too much heat especially for that cook time. Restaurants will usually keep their steaks at 120-130F so they can slap it on a searing grill, pull it just after it gets marks for rare and in under 1 minute for medium rare. The general answer for home users is 3-4 hours @129-135F for a ribeye or strip, once you've reached a four hour cook time at those temps it's starting to really break down connective tissue, keep going and it shreds rather than having a tender but still steak-like chew.

They did delicate the app for their original model, after many years. That one does have physical controls. Not saying to expect a free online service for life, but they have set a precedent that they will eventually kill that free service. However, for $20, I can see the argument for an item that will inevitably become a paper weight.

Risk it? Plenty of comments here are very positive and almost 80% of the ratings on Amazon are 4-5 stars. Do you tend to just read the doom-and-gloom reviews from people with no clue how to use it? Your loss. If you've never done sous vide, THIS is your opportunity to try it and be amazed.
In 2024, Anova announced it would begin charging new customers $2 a month or $10 per year to use its sous vide. While it appears to be free to use currently, this is an older model on clearance that could lack support in the near future. Others have mentioned "These don't have any buttons and require the App to use."
So, yes, it is a risk to purchase any product from any company when the outdated model is on clearance.
I'll read comments and reviews as I see fit. You don't need to be concerned with it.

I'd highly recommend the Serious Eats article on Reverse Sear as it gets into the science and actually testing a lot of the false "common knowledge" passed down with reverent seriousness. One of the most useful tips (and broadly applied ideas) was making sure the steak was patted really dry before searing. It takes 5x the amount of energy to convert almost-boiling water to steam as it does to move that same amount of water from 33-211F, so any amount of liquid is going to stall browning and steam the meat instead, 100F lower than the blast-off point of the Maillard reaction that gives us the toasty seared flavors we're looking for. I've also found that using a thicker pan on slightly lower heat and dropping a bit of butter in with the steak is somewhat more forgiving, as the milk solids will also brown and complement the meat. You can quickly baste in-pan for max flavor and sear coverage, and a great opportunity to add aromatics like rosemary.
I have started searing with a bit of butter in the pan, and I add my rosemary sprigs to both sides of the steak while in the sous-vide.

This is the company that will charge you a subscription for remote starting your oven. They may or may not do that with this sous vide, but know what you're supporting.

I avoid this company like the plague now even though I currently own an Anova oven.
That's good to know.

Setting up the app was easy. The device connects via both Bluetooth and Wifi (ie it seems to require both).
The app startup page tries to push you into "free trial", but you can get past that screen without signing up.

There are alternative apps for at least some of the Anova units. I bought the first Anova Precision from 8+ years ago and used an alternate app that had some cool functions (my temp wheel is forever purple). I dunno about an Android app or if they work on other models but I found a iOS app Sous Vide °Celsius.

No you don't need to subscribe. I was skeptical too, but decided to take the plunge with this model about 4 months ago. Unlocked a whole new world for me. App works amazing. Simple and easy. One of the best $20 bucks spent. As a HUGE side bonus for me, I like to do liver for my dog and that has always been a challenge to find a suitable way. Messy and smelly, kind of gross actually. With this, In the bag from frozen. No more mess. No more smells. If this was the only thing alone, it would have been golden. I usually do a few different meats at once. It's amazing, hands down.

You really think Anova wants the liability of people suing them because an appliance that was advertised as free to use when purchased is suddenly behind a paywall and their purchase is now bricked unless they pay? Pretty sure there are laws against that. They could certainly start charging people after a certain date but that would absolutely need to be CLEARLY advertised when you buy the appliance. Currently, the subscription is advertised as optional and lawfully, would need to stay optional for those that purchased it as such.

The product is free to use using the app in BLUETOOTH mode and if you want WIFI mode, you pay for that. I highly doubt that will change.
