The one thing I noticed when I do a bunch of sealing is the cheaper bags with smaller patterns on the one side do not work as well when the sealing surface is warm from doing multiple jobs. It tends to not allow the vacuum to build due to the bags closing up from the warmth.
I bought the foodsaver bags at Costco or Sam's and they are way better than the cheaper bags, especially if you plan on doing 10 or more double sealed bags.
That's just my experience.

Last night I made a big match of mashed potatoes and sealed portions into these bags to freeze. Vac sealing mashed potatoes is very satisfying.
I would also suggest buying some "souper cubes" or something similar. If you want to vac seal liquids you freeze them first then seal them. I also freeze dough before sealing so the balls don't get the life crushed out of them. I also freeze meatballs before sealing.
And a sous vide is a great companion to a vac sealer.
