Carbon steel woks are generally superior for home cooking due to their lightweight, responsiveness, and rapid heating, making them ideal for agile stir-frying. Cast iron woks offer superior, steady heat retention for searing but are much heavier, slower to heat, and more brittle. Both require seasoning to become non-stick

How does this compare to Joyce Chen (like this item [target.com])?

Via Google:

GreenPan faced a significant false advertising class-action lawsuit in 2019, alleging its "healthy, toxin-free" ceramic non-stick pans actually contained concerning compounds like silane and aluminum oxide, contradicting claims of being free from PFAS, lead, and cadmium

Do what you want with that info. There was a similar pan posted for $20 on Amazon that showed significant peeling of the coating.

No one other than American TV chef toss their pan. You toss the food a bit with spatula in the pan, not the pan itself. To do that without food flying off, you need a large pan (and a very powerful burner). Taking the pan off the burner to toss doesn't make any sense - stir fry requires extremely hot pan and very fast cooking pace- no burner (definitely not any home burner) would allow you to remove the pan and still retain the extreme heat. These are conflicting objectives.

Anyone cares about their Chinese cooking would enjoy Ang Lee's 1994 movie eat drink man woman. It has extensive segments showing his home kitchen and his restaurant commercial kitchen. No pan tossing. The most is a bit jiggling of the pan - very different from tossing.

Yeah ceramic nonstick definitely ended up being a scam.
Would note that this does not have a nonstick coating though; it's just seasoned carbon steel.

This pan in particular doesn't use Thermolon non-stick coating which was the one accused in the lawsuit. Also should be noted, the lawsuit was dismissed in 2020.

If you know what you're doing with a wok, a cast iron wok is an oxymoron.

My bad, I linked the wrong item. Joyce Chen also makes Carbon Steel woks. https://a.co/d/0bbEILLF
Mainly was asking about the brand. Joyce Chen is quite well known for woks, but I'm not familiar with Green Pan.
