Reolink has a 4G LTE Dual-Lens Battery Security Camera with Auto-Zoom Tracking for $218 shipped. Solar kit costs extra $30, but should be all you need for an off-grid setup. IMO on the premium side but for outdoor and all-weather I'd probably pay a premium for the reliability of these and recommend over Eufy (which I also use).
  • Dual View, Dual Tracking
  • 4G LTE Network
  • Person/Vehicle/Animal Detection
  • 4K 8MP Ultra HD

Looks like there's a free SIM option for 100MB but I suspect you'd burn through that pretty quickly. Next is $5.39/mo for 1GB

I'm currently using a Tmo 30GB internet hotspot plan for $10 after $5 autopay discount, it tends to not drain any bandwidth from the Reolink devices unless the app is running/streaming in live mode or rewatching a recording, but I also don't have motion detection enabled but I'd assume it'd send thumbnails in that case.

Nah, I used 1gb over 365 days which included downloading videos and periodic review. If you watch a LOT, then maybe. I have 4 wired reolinks uploading low quality video and full quality pics that don't touch the 30g T-Mobile plan I have. They are not demanding at all unless you are a serial viewer. Watch low quality stream as well.As for this camera and cameras like it. I don't suggest it. They need to have a WiFi option available to perform maintenance. When these go offline you have to physically deal with it and it doesn't have the ability to use an external 4g modem. Multiple cards get expensive.

Dang I think we have a similar setup, but I have 8ch reolink PoE with t-mo plan on a netgear modem. I also don't understand why many of the 4g security cameras lack wifi and require a paid cellular sub. Though I wonder if the t-mo sim works on these instead of connecting to a ethernet modem -> router.
