You can access a NAS over the network. As the name implies network attached storage... this just connects to a single computer over USB

This would not be a suitable option for a plex server right since it would essentially have to be tied to whatever device you were watching plex on?

This exactly, and totally what I've been saying! RAID fanatics are control freaks in a certain sense: sometimes you just can't guarantee things all by yourself...
