E.g. if I order multiple items in the same order totaling over the minimum, and each ships at a different time and charges my card separately as a smaller transaction, it wouldn't trigger the reward.

Eligibility and Enrollment
Enrollment is limited. Eligible Card Members must first add offer to their Card and then use same enrolled Card for qualifying purchases. Any Cards issued outside of the US are not eligible. Only Card Members who enroll are eligible; offers are non-transferable.
Limit of 3,600 additional Membership Rewards® points per eligible Card Member.
Qualifying Purchases
Offer valid online only at US website amazon.com or through the Amazon app. Not valid on purchases shipped outside of the US. See merchant website for shipping policy. Some merchants may not ship to all areas. Excludes corporate gift card and custom-designed gift card purchases. Excludes Prime memberships and auto-renew subscription services.
Eligible Card Members will earn 1,200 additional Membership Rewards® points, up to 3 times, on qualifying purchases on their eligible Card.
Purchases must be made in USD, and offer is only valid on purchases made directly with the merchant. Offer not valid on purchases made using third parties, such as resellers, delivery services, or other intermediaries.
Additional Membership Rewards® Points
You must be enrolled in the Membership Rewards® program at time of qualifying purchase. If you meet the offer requirements, the additional Membership Rewards® points will typically post to your account within 30 days after you make a qualifying purchase, provided that American Express receives information from the merchant about your qualifying purchase. In some circumstances, it may take up to 90 days after the offer end date for additional Membership Rewards® points to post. Please call the number on the back of your Card if the additional Membership Rewards® points are not posted to your account 30 days after you made the qualifying purchase. Accounts that are canceled at the time of fulfillment of the offer will not receive the additional Membership Rewards® points. Additional Membership Rewards® points may not be received or may be reversed if an eligible purchase is returned, partially returned, refunded, canceled or modified.

Do correct me if I'm wrong, but this math seems off to my eyes.
Amazon points are worth 1:1 when redeeming for statement credit (essentially $0.01 per point)
Whereas the AmEx Platinum's points are only worth $0.006 per point when redeeming points for statement credit.
So for statement credit, this promotion is only marginally better than your Amazon CC (not quite the 10% back…only about 5.4 pts per dollar when the point conversion rate is taken into consideration).
However, if you're redeeming for flights, hotels, or giftcards….then yes the AmEx points would be advantageous.
