I hand rolled mine and they were great. I liked that they weren't perfectly round, it made them feel more rustic.

Actual mexican food is so different from stuff typically found here in the US. Most stuff here is Tex-Mex.

I have a question. My bf's birthday was coming up and I'm really tempted to make him a cake using fondant. Are any of you lovely ladies (and men) familiar or do you have any tips? I want to make him something nice.

fondant tastes terrible vomit

have you ever tasted it? i wouldn't strongly recommend you make a homemade frosting and avoid the fondant. it's great for cake decorating, but when it comes to actually frosting a cake, it is not the best choice if you're looking for something flavorful and edible.

honestly, if you want to make a cake that looks like the kind of cakes you see on Ace Of Cakes (on Food Network) then fondant is the way to go. but it does not taste good...i would rather have a homemade buttercream frosting that tastes delicious (and isn't perfect) over a cake with fondant on it, that looks perfect but isn't as great because fondant gets in the way of the frosting/cake.

I found a football helmet shaped cake pan. I was thinking of getting that and then making a replica of a Philadelphia Eagles helmet since that's his favorite team.

BF is a fatty and loves sweets. I wouldn't want to make him a shitty tasting cake. I just thought they look so nice. Like those cakes on Cake Boss. drool Now I know they taste like shit.

Is fondant the same as modeling chocolate that Buddy always talks about?

one of the ladies in the g/ds forum is a cake maker, owns her own shop, and trained with one of the competitors that frequents food network challenge. if you're still interested in making a cake, i'm sure she can give you some great tips. i'm blanking on her sd user right now, but if you drop me a line i can get you in touch with her. yeah, i think the press is a must for making your own. that's exactly what i'm saying about "mexican" food in the states. it's no good once you've had authentic. Smilie

Stuffed baked chicken with cabbage apple salad and fried squash.

The chicken is stuffed with basil garlic goat cheese and rubbed with olive oil, parsley and garlic. The salad is red cabbage, organic gala apple, balsamic vinegar and local Winter Park honey. Squash is breaded in cornmeal with salt & pepper.

looks decent. i make a similar chicken dish, but i use pesto. Smilie

DH doesn't like pesto. There are a few things I would do different next time, this was a big experiment. It still tasted good though. I really liked the salad. Tonight was one of those nights when I needed to use up leftovers and such, so I just made random stuff laugh out loud

I made fish tacos last night!!! Whee

I referenced 3 or 4 recipes online but didn't follow any of them. So I'm particularly proud of myself. nod

What you're looking at is a corn tortilla on the bottom, with a black bean puree spread on it. That is topped with oven fried mahi mahi bites, shredded savoy cabbage, chopped Roma tomatoes, and sour cream.

I took fresh mahi mahi fillets (no skins), cut them into chunks, and dipped them in egg, then seasoned flour (cayenne, paprika, garlic salt, pepper, cumin), then back in egg, then in panko bread crumbs. I laid them out on a cookie sheet and baked them for 25mins at 375 degrees.

For the black bean puree (just think refried beans, made fresh), I had 2 cans of black beans, rinsed and drained. I put them in the food processer and added 1/4 cup of finely chopped onion, 1 finely chopped jalapeno pepper, and fresh lime juice (roughly half a lime). I blended a little, added a drizzle or two of olive oil, and continued to blend until they were the consistency of refried beans.

Overall, DH gave this dish a Thumbup but said that the fish was slightly dried out and possibly too "bready". Next time, I will bake the fish bites for just 20mins, and I think I might lay off the panko.

yeah, even looking at the the pic, the panko flakes look too bulky and should be made finer for this type of cooking. the bigger flakes work great with dishes like tempura or fried chicken, but for breading fish, smaller and finer flakes not only look more aesthetically pleasing, but have a better texture.

as for the fish drying out, it looks like the oil you used wasn't hot enough and probably ended up being over dropped. mahi mahi looks cooked ok from the outside, but you want the inside to be opaque and still be moist. you want hottest possible oil to get a nice browning on the crust, but at the same time cook the fish enough without drying it out. Big Grin
