salmon with strawberry salsa and roasted asparagus. The salsa is made with strawberries, tomatoes, parsley, honey, balsamic vinegar and olive oil. I have never made asparagus on my own before and all I had was frozen so the poor things don't look so good, but they tasted just fine.
the stuffed peppers are coming out of the oven....right now!
To me though there's nothing quite like really choice and fresh asparagus! It's one of my all time favorite vegetables to have from fresh.
Even if it makes my urine stink a little!!!

I parboiled the peppers for 2 or 3 minutes before stuffing them, then they baked about 25mins, so they're cooked but not mushy. Definitely still slightly crunchy, which I prefer.
FD, do you come up with this stuff yourself, or do you scour the internet looking for new recipes to try?

i forgot, there is also brown rice in that stuffing too

Made a small apple crisp tonight per DH's request.
First picture are the apples in their cinnamon, butter, brown sugar goodness. I leave the skin on my apples (more nutrients supposedly, plus DH likes it like that) No harm as long as they are very thoroughly washed
Second picture is the finished product after DH dipped into it
I've never actually looked at an apple crisp recipe and I might use more oats than most would, but it tastes damn good
