Pierogie Caserole

1 lb Elbow Macaroni (cooked)
1 lb American Cheese (sliced)
5 or 6 Medium sized potatoes (mashed)
lb butter or margerine (2 sticks)
1 large onion (chopped)

Saute onions in butter. Pour onion/butter mix in bottom of casserole dish. Make 2 layers or Macaroni then cheese then potatoes (ie Mac, Cheese, Potatoes, Mac Cheece, Potatoes). Top with the rest of the onion/butter mix. You can sprinkle the top with paprrika if you wish. Bake in oven 25- 30 minutes @ 350 deg.

This batter can be stored in the refrigerator for several weeks in an air tight container.

Ingredients:
3 Cups Bran
1 Cup Boiling Water
1/2 Cup Shortening
1 1/2 Cups Sugar
2 Eggs
2 Cups Buttermilk
2 1/2 Cups Flour
2 1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt

Directions:
Combine 1 cup bran and 1 cup boiling water in a bowl and allow to cool. In another mixing bowl, cream shortening and sugar. Beat in eggs one at a time beating well between each egg. Add remaining ingredients and mix until dry ingredients are incorporated.

Fill muffin tins 2/3 full and bake at 400 for 25 minutes.

Notes:
These are best with rough cut bran in my opinion.

lux....tried that rice casserole recipe you posted.....turned out pretty good........although I put in way less butter since I am watching the waist

Gorgonzola Bowtie Pasta
(4 servings)

16oz uncooked Bowtie pasta
2 TB Butter
2 Cloves Garlic, Finely Chopped
3 Cups Half-And-Half
1/2 Cup Dry Wine (Chablis)
1/2 Tsp Salt
1 Cup Crumbled Gorgonzola Cheese
Mushrooms

1. Melt butter in 2-quart saucepan over medium heat. Cook garlic in butter, stirring occasionally, until golden brown. Stir in Half-and-Half, wine and salt. Cook, stirring occassionally, until mixture thickens slightly; reduce heat to medium-low.

2. Cook and drain the Bowtie pasta as directed on package.

3. Begin frying up mushrooms (approx. 1 package of sliced) in seperate pan, with either Pam Cooking Spray or a small amount of butter or margarine.

3. Stir in Cheese. Cook, stirring occasionally, until cheese is melted.

4. Toss Bowtie and sauce. Add mushrooms and mix together.
