Margarita fruit salad
About 4-6 cups cut fruit (cantaloupe, grapes, honeydew, apple, etc.)
1/2 cup honey
1/2 cup margarita mix with no alcohol
1/4 cup roasted, slivered almonds (easy to roast yourself, if necessary)
Combine all ingredients in bowl.
Stir with big spoon to coat all the fruit.
May want to warm the honey for easier mixing (don't boil in the microwave!).
Chill out with a beer.
Then put the bowl in the fridge to chill salad! At least 1 hour.
Stir again before serving.
Can easily be transported.
Chocolate and Fruit Torte
Use a plain chocolate cake mix (you can go with a low fat one if you're watching your weight) and bake according to the directions on the box. Leave the cake in the cake pan and once the cake is completely cooled, top with fresh seasonal berries and/or fruit. My preference is to use blueberries, halved strawberries and kiwi fruit slices.
Once you have the fruit/berries on, pour a store bought plain (not flavored) fruit glaze over them so the fruit/berries have a light coating on them. Then refrigerate the cake so the glaze can set up. The great thing about this torte is that the glaze seals in all the moisture from the cake and fruit/berries making it taste really rich but not heavy. No one will ever know it was a store bought mix!
Take the torte out of the fridge about 20 minutes before serving to give the berries/fruit a chance to warm up a bit. Berries and fruit loose a lot of their flavor if you eat them while they're cold.
My wife did this the other night - it was the best pot roast I've ever had, and I'm one fat doesn't-miss-a-meal motherfarker. I'm amazed at how simple it is to make.

Put in crock pot, high for 1 hour, low for 8 hours
Made a nice gravy, too. OMG, it was scrumdillyicious.

Usually when I do the grilling I also take a sheet of foil and place veggies like colored bell peppers, onions and zucchini coated in a bit of olive oil and seal that up as well and place on the other side of the grill on top of the grate.
Make some rice and you have a good filling meal.

Here's one I made that I *really* liked. I just didn't use any pecans.
INGREDIENTS
- 1/4 cup butter, melted
- 3 tablespoons Dijon mustard
- 1 1/2 tablespoons honey
- 1/4 cup dry bread crumbs
- 1/4 cup finely chopped pecans
- 4 teaspoons chopped fresh parsley
- 4 (4 ounce) fillets salmon
- salt and pepper to taste
- 1 lemon, for garnish

Hamburger Stroganoff
1/4 C. minced onion
1 Clove minced garlic
1/4 C. butter
1 Lb. ground beef
2 T. flour
2 t. salt
1/4 t. pepper
1 Lb. mushrooms
1 can cream of chicken soup (we use Campbells)
1 C. sour cream
Saute onions and garlic. Add meat and cook till browned. Stir in flour salt, pepper and mushrooms, cook for 5 minutes. Add soup and simmer for 10 minutes then stir in the sour cream and serve.
